Some of you may already know we follow a whole foods plant-based diet and because of that, we try to follow a vegan lifestyle in our home. For this reason, I came up with the idea of sharing how you can also adopt vegan recipes for this lovely occasion. All these recipes are plant-based and cruelty-free, the best part is that they’re easy to do.

Chocolate Pancakes for Breakfast

One of the recipes we learned from nutrition studies is the chocolate pancakes made with oatmeal. In this recipe, we use pure cocoa powder which is a potent love stimulant and very delicious!

Ingredients:

1¼ cups of oatmeal

2 cocoa powder (sugar-free)

1 baking powder

1 flaxseed

1 chocolate chips

¼ Himalayan salt

1 cup of almond milk

1 spoon of date syrup

1 spoon of vanilla

1 spoon of apple cider vinegar

¼ cup of apple puree

Instructions:

1. Combine dry ingredients (flour, cocoa powder, baking powder, flaxseed, chocolate chips, and salt) in a medium bowl.

2. Combine wet ingredients (almond milk, date/maple syrup, vanilla, and apple cider vinegar) in a small bowl and mix well. This will create a vegan mix for your delicious and fluffy chocolate pancakes.

3. Add vegan milk and applesauce to the flour mixture and stir until well combined.

4. Let the dough rest for 10 minutes while it rises and thickens as the flaxseeds are soaked; it can almost double in size (flaxseed serves as a replacement for the egg).

5. Heat a nonstick skillet or electric griddle over medium heat and brush with a little coconut oil if desired.

6. Scoop dough into 3-inch circles. Cook for 2 to 3 minutes or until bubbles have burst in each pancake and tops begin to look dry. Flip the chocolate pancakes over and cook for an additional 1 to 2 minutes.

You can serve these delicious pancakes with a topping of coconut cream, strawberries, bananas, and wild blueberries. If you prefer, you can also make your chocolate Nutella at home to put on top or almond butter.
